These Old Fashioned Carrot cookies are easy to make and will be a favorite cookie recipe in your recipe box. Made with freshly grated carrots, cinnamon, oats, brown sugar, and dried fruit. If you are a fan of carrot cake, you will love these cookies. I use raisins in this recipe, but you can also use dried pineapple. These cookies will stay fresh in an airtight container for up to a week. Great for an after school treat, or for gifting. I love gifting cookies for special occasions. I use my Kitchen Aid stand mixer for this recipe, but you can certainly just use a spoon to incorporate the batter. I hope you enjoy this recipe.
