Are you ready to use your Instant Pot for a patriotic and festive mouth-watering dessert? This Instant Pot Red White and Blue Cheesecake is just what your 4th of July plans need. And if you show up to the family gathering with this in your hands, it’s certain to be one of the biggest hits of the night!
Since the Instant Pot is cheesecake-friendly, get ready to be amazed. Who knew that a kitchen appliance would be capable of making breakfast, lunch, dinner, AND dessert all with great ease! After you make it once, you’ll never make your cheesecakes any other way ever again!
This recipe calls for a 6-inch Springform Pan and I would recommend sticking with that. It’s a good size for a cheesecake and that size of the pan is what this recipe is written for. If you venture out and use a different size, it’s up to you but I can’t vouch for the final result. (if you do, let me know as I’d love to hear how it goes!)
For this recipe, we have the cherries on top as that’s usually the most common. (and they also make up the “red” in the red, white, and blue!) But you can also use strawberries or even just opt for a whipped cream that you tint red as well.
The great part about this simple cheesecake recipe is that it’s up to you however you want to top it. Fresh fruit is always great but I’m also a fan of plain cheesecake, too.

Crust ingredients
2 C crushed graham cracker crumbs
¼ C unsalted butter, melted
2-3 drops of sky blue gel food coloring
Vanilla cheesecake ingredients
Two – 8oz cream cheese, softened
½ C sugar
One TBSP Cornstarch
Two large eggs
Two tsp pure vanilla bean extract
Directions
Line the bottom of a 6inch springform pan with parchment paper and spray the sides with pam baking spray Using a large bowl mix the melted butter and graham cracker crumbs. Mix in the blue food coloring until combined Press the crust into the springform pan. Place into the freezer while you make the cheesecake mixture.
