This recipe uses shredded swiss, and cheddar cheeses. I personally favor extra sharp cheese, but you can use any cheddar you like. 1 (16 ounce) elbow macaroni
1 tablespoons butter
1 small onion, diced
2 cloves garlic, minced
6 cups water
2 cups shredded Swiss cheese
3 cups shredded cheddar cheese
2 cups diced ham
½ cup sour cream
Salt and pepper, to taste
Using the saute mode, heat the electric pressure cooker until “hot.” Add the butter and onion. Cook until the onion is softened, about 3 to 5 minutes. Stir in garlic. Cancel the saute mode.
To the electric pressure cooker, add the water, salt, macaroni, and ham. Do not stir.
Place the lid on the electric pressure cooker and set the valve to sealing. Set the pressure cooker to “manual” or “pressure cook” for 6 minutes. Quick release the pressure when the cook cycle is complete.
Stir the sour cream, swiss cheese, and 2 cups of cheddar cheese into the pasta. Top with remaining cheddar cheese and place the lid over the pressure cooker just until the cheese melts and the remaining water is absorbed.
