Instead of thinking that you have to give up everything with flavor, you can whip up this delicious dessert recipe instead! This dessert recipe proves it’s easy to eat low carb and still have a ton of taste!

Why is it called a Chaffle?

It’s a fun play on words. A chaffle is what is also known as a Keto waffle and it’s also called this because its main ingredient is cheese. And trust me on this…it’s so good and guilt-free! Many people eat this for breakfast but I like to eat it at any time of the day! 

It’s the perfect snack or dinner idea to be hearty and tasty as well.

Can you freeze a chaffle?

You sure can! If you make up a batch of chaffles and have some leftover, just pop it in the freezer for later! It’s a simple way to meal prep for later. Plus, when you unthaw it in a matter of moments, it’s a super simple way to get a nice treat in no time at all.

I’ll sometimes make a larger batch on purpose just so I can freeze some for later and have a break from cooking that day! 

What do you put on a chaffle?

You can put anything that is keto-friendly on your chaffle! Think bacon or eggs for sure! Talk about a nice, simple, hearty meal that will fuel your body for the whole day!

Chocolate Chip Chaffle w/ Peanut Butter Whip

Ingredients

Yields 6 mini chaffles 

Ingredients – 

2 large eggs

2 tablespoon heavy whipping cream

1 teaspoon vanilla extract 

1 tablespoon monk-fruit sweetener 

2 tablespoons unflavored whey protein

1 teaspoon baking soda

¼ cup unsweetened cocoa powder

1 cup mozzarella cheese, shredded

¼ cup Lily’s chocolate chips 

Topping –

½ cup heavy whipping cream

2 tablespoons sugar-free peanut butter powder

1 teaspoon vanilla extract

1 tablespoon Swerve confectioner’s sugar

Eggs in a mixing bowl

In a mixing bowl, add eggs, 2 tablespoons heavy whipping cream, vanilla extract, and sweetener. Beat until frothy.

In a separate mixing bowl, add whey protein, baking soda, and cocoa powder, then whisk together.

Add mozzarella and dry ingredients to egg mixture and beat until well combined.

Add and fold in chocolate chips.

Preheat waffle maker and generously spray with low carb cooking spray.

Add ¼ cup of batter to waffle maker and close. Cook for about 4 minutes or until beginning to darken. Repeat with additional batter and allow to cool slightly after removing from the waffle maker.

In a mixing bowl, add whipping cream and beat until peaks begin to form. Add in peanut powder, vanilla extract, and Swerve and beat until just combined.

Add whipped topping onto chaffles and serve.
