Keto Strawberry Muffin recipe is low carb and perfect for breakfast or a snack. These muffins incorporate almond flour. Almond flour is high in fiber, low carb, and contains healthy fats. I like to purchase almond flour in bulk on Amazon. I like Bob’s Red Mill brand. You can use any brand your local grocery carries.
As you probably can tell, strawberries are my favorite fruit to incorporate into my recipes for the summer. The carbs in blueberries quickly add up, so you have to be careful with this berry if you are on the Keto diet. The best fruit to use in your keto recipes are strawberries, blackberries, and raspberries.
You can easily incorporate all the ingredients into one bowl with a spatula for those who don’t have a mixer. I use my Kitchen Aid for the recipe, only because it is on my kitchen counter most of the time, but a handheld electric whisk will work just fine. Now, lets make some muffins!
Keto Strawberry Mini Muffins 🍓

Net: 24 muffins
Ingredients
¾ cup Swerve Granular sugar (1/4 of this is for the strawberries)
Five tablespoons of melted butter
Three eggs
One tablespoon of vanilla extract
1/3 cup of heavy cream
2/3 cup of finely chopped strawberries
2 ½ cups Almond flour
One teaspoon of cinnamon
Two teaspoons of baking powder
Instructions
Preheat oven to 350 degrees F and spray mini muffin tins with nonstick spray.
Add ¼ cup of the swerve sugar to the strawberries and mix well. Let sit while you mix the rest of the batter.
Mix the butter and remaining sugar until combined. Then add the cream, vanilla, and eggs. Mix for 2 minutes.
Add in the dry ingredients and mix for 2-3 minutes, making sure everything is thoroughly combined.
Fold in the strawberry mixture.
