Maple Pecan Cranberry Raisin Granola

I love granola as a snack or a breakfast cereal.  Maple syrup makes this granola so delicious.I had to go grocery shopping yesterday and I wanted to bake something sweet. I wasn’t sure of what I wanted to make, only that I had a sweet tooth. I have a cookbook that I got a few years back from work. It’s an employee cookbook where everyone submitted a recipe or two and they sold them for five dollars. I picked up my copy and have had it for about five years. I was flipping through the pages and came across a recipe for granola. It sounded so good and I knew I had to try it. I have to tell you this granola was awesome! Much better than the granola cereal you buy in the store. This recipe contains pure maple syrup which can be a little pricey. But it is well worth it.   This granola can be served as a snack or breakfast cereal. This granola is also fabulous to prepare for Christmas and give away to family and friends  Now on to the recipe..

Pecan Cranberry Raisin Granola( Holiday Gift Granola)

6 cups Old Fashioned Oats
1 cup Coconut(shredded)
2 cups chopped Pecans
1 cup Cranberries(dried)
1 cup Raisins
1/2 cup Canola Oil
1 1/2 cups Brown Sugar
1/2 cup Pure Maple Syrup

1.In a microwavable medium-sized bowl combine brown sugar, maple syrup, and canola oil. Microwave for three minutes. Remove and stir until sugar is melted.

2. In a large bowl combine oats, pecans, and coconut.

3. Pour melted syrup mixture over dry ingredients and mix well to coat dry ingredients.

4. Spread evenly onto two large pans and bake at 350 degrees for 10 minutes. Remove from oven and stir well. Return to oven to bake for an additional 10 minutes.  Let granola cool add cranberries and raisins. Mix well and store in an airtight container. Enjoy with milk or as a healthy snack.
