Roasted Pepper & Feta Pasta Salad
This is a quick pasta salad recipe that can be served with just about anything. Delicious with grilled chicken or a steak.. You can have this on the table in no time..
Prepare pasta as directed, then rinse and set aside. Wash and halve the peppers, removing seeds and stem. Lightly brush the peppers, skin side up, with olive oil Broil on a cooking sheet until the skin just begins to burn. Let peppers cool, then remove the skin, and cut into strips. Add the pasta, pepper strips, olives, and parmesan cheese to a large mixing bowl.Pour dressing over ingredients, toss in feta.
Stir gently until well mixed.
Chill for at least 1 hour, or overnight.
