I love cheesecake. This winter, I have been in the baking mood. Last week, I made homemade cinnamon rolls and pecan sticky buns for my coworkers. This week, I wanted to share a recipe for a delicious Oreo Bottom Caramel Cheesecake. This is decadent, rich and will satisfy your sweet tooth. If you love Oreos and caramel, this recipe is for you. Made with an oreo crust, and swirled with rich caramel. First, process your Oreos in a food processor. I added my melted butter, sugar and stirred to combine. Make sure your crumbs are wet but not pasty. Press into a cheesecake pan and bake for 5 minutes. I let my crust cool while making my filling. Now to the fun part, making the cheesecake batter.
I used my Kitchen Aid mixer to combine cream cheese, vanilla, and sugar. Blend well until batter is creamy.Pour your brickle chips or brickle toffee into the batter and blend well. Pour into your cheesecake pan.
You can make your own caramel sauce or just use store bought caramel topping. I used store bought caramel topping for this recipe. Go ahead and drizzle that yummy caramel sauce all over the top.
Cut through your batter with a knife several times to give the marbleized effect. Isn’t it beautiful?
Bake at 350° for 30 to 40 minutes. Center will be set and not liquidy, but not raised and baked like the outer portion. Now you got to let it cool for a couple of hours before serving.
I know it’s hard to wait but will be worth it. Before serving drizzle caramel over the top and enjoy! I know you will love it.
