I love meat, but like to eat meatless dishes now that I am trying to eat healthier these days. This recipe is so simple, and you don’t even miss the meat. I love tostadas. This is a quick and easy lunch or dinner recipe your family will enjoy.
You will need the following ingredients for this recipe: black beans, cream cheese, hot sauce, corn tostada shells, queso fresco (or feta), avocado, tomato, diced, red onion,Juice of 1 lime.
Great for those busy weekdays. In a medium saucepan, add beans. Heat over medium-high heat, until heated thoroughly.Spoon topping mixture over the prepared tostadas and enjoy! Add hot sauce and remove from heat. Add cream cheese and beat bean mixture until thoroughly combined. Prepare a baking sheet with parchment paper.Lay tostada shells on a pan, avoid overlapping.Spread a layer of beans over the shells, and top with cheese. Place under a low broiler for about 3 minutes or until cheese begins to melt and shells begin to brown on the edges In a small mixing bowl, add the avocado, tomato, onion, and lime juice. Mix together Spoon topping mixture over the prepared tostadas and enjoy!
