Instant Pot- Pot Roast Recipe
This is the recipe I have been using for years. I just tried it for the first time in the Instant Pot and I am so glad I did.. delicious!
  1. Turn Instant Pot on to Saute and add vegetable oil. Salt and pepper the roast on both sides and sprinkle with garlic powder. When hot ,brown meat on both sides and scrape bits from bottom of pot. Add beef broth, Lipton Onion Soup Mix, water, baby carrots, and potatoes. Secure lid on Instant Pot and cook on manual high pressure for 35 to 50 minutes. Serve with a side salad and enjoy.
  2. To thicken gravy remove cooked roast and vegetables. Add 1 tbsp cornstarch to Instant Pot and push saute . Stir gravy until thickened and gravy is smooth. If needed strain gravy in a strainer.
