Mix dry ingredients until incorporated, set aside.Add sugar, melted butter, egg and vanilla to standing mixer. Beat until mixture is mixed well. Add mashed bananas and mix until incorporated. Add dry ingredients and mix just until you can no longer see the flour. With a mini scoop add batter to mini muffin pan and sprinkle a few chopped pecans on the top. Bake for 15 minutes or until a toothpick inserted comes out clean. I love to serve these fabulous muffins warm with just a pat of butter. Enjoy!
