Prep Time: 25 minutes
Chill Time: At least 4 hours Ingredients:
Directions:
1. In a large mixing bowl beat whipping cream until it starts to thicken.

2. Once stiff peaks form, add in vanilla and sugar and beat a little longer.
3. Take a vanilla wafer and spread some whipped cream on top and then add another wafer.

4. Repeat making stacks of cookies and then lay them on their side in a baking dish or on a plate you will display the cake on.
5. Continue to make a long row of cookies about 25-30 before starting another row next to it like a log.
6. Once you have 3 long rows or 4 shorter ones, use the rest of the whipped cream to frost the entire cake.

7. Dot with raspberries and refrigerate until ready to serve (at least a few hours).
8. When read to serve, use a grater to shave chocolate on top. 9. Slice on a diagonal for serving to show off the layers.
