How do you know when the muffins are done baking in the oven?

The easiest way is to insert a toothpick into the middle of the muffin and make sure it comes out clean. If you remove the toothpick and there is any batter on it, you’re going to need to put the muffins back in the oven for a few more moments. I always recheck them after a couple of minutes and use a clean toothpick too! This way, you don’t overcook them and have dry muffins.

Can you use another type of nut for these muffins?

You can, but be sure that you make confident that they’re keto-friendly. I like pecans since they’re a “softer” type of nut, and they pair up well with the chocolate flavor.

Ingredients for Keto Chocolate Pecan Muffins

Ingredients:

2 cups of almond flour

½ cup Lily’s baking chips

¼ cup unsweetened cocoa

¼ cup pecans

¼ cup Swerve Brown Sugar

Three eggs

¼ cup oil

¼ teaspoon salt

¼ teaspoon baking soda

Instructions

Preheat oven to 350 degrees F and line your cupcake tins.

Mix dry ingredients in a bowl, save the pecans and chocolate chips for last.

Mix in eggs and oil and until mixture is well combined.

Fold in pecans and chocolate chips.

Scoop batter into 12 even cupcake tins and bake for 15-20 minutes.
