Ingredients

1 pound ground chuck

1 red bell pepper, diced

1 onion, diced

2 to 3 zucchini, sliced

1 (15 ounce) can diced tomatoes

1 teaspoon salt

½ teaspoon black pepper

2 teaspoons chili powder

1 cup long grain white rice

2 cups water

Instructions

  1. In a large (12 inch) skillet over medium-high heat, saute the ground beef, onion, and bell pepper, cooking until the meat is browned, chopping into small pieces. Drain well.
