While visiting my friend  Christa, I had the most delicious chicken salad I have ever tried. She gave me the recipe and I had to share it with you.  I love quick and easy recipes.I work 12 hour shifts and it is hard sometimes to find the time to  cook after work. So when I’m working I try to stick to the quick and easy. I have more time to cook and bake on the days off. Ive been on vacation since Dec 22 and it is great. I have had some time to browse through my new cookbook , The Doves Nest that I bought before Christmas on a visit to Waxahachie TX. On page 65 of the cookbook I found a recipe for The Dove’s Nest Chicken Apricot Salad. I know I will have to try this recipe to. This chicken apricot salad is served at The Dove’s Nest restaurant and has been a hit from day one. I will be featuring The Dove’s Nest Chicken Apricot Salad on a later post.
