Strawberries My Favorite Fruit And Strawberry Bread

June 18, 2010

I love fresh strawberries. They happen to be my favorite fruit. I prefer strawberries over bananas and oranges. When strawberries are in season I like to make strawberry shortcake, strawberry cheesecake and of course strawberry daiquiri’s. I found a new recipe for a Strawberry Bread on Allrecipes. I have never tried strawberry bread before. I have made banana bread many times and I love that so I knew this bread made with fresh sliced organic strawberries would be equally delicious. Organic strawberries are a little pricey but I like the fact that they are chemical free and that to me is better for you. I also use King Arthur organic flour for this recipe and Canola oil instead of vegetable oil.I usually put pecans in my quick breads and this recipe called for pecans so that is also a plus. Now on to the recipe:

Slice 3 cups of strawberries

Place in bowl with 4 beaten eggs, canola oil and stir to combine

Add all dry ingredients to a separate bowl and mix together

Slowly combine flour mixture with wet ingredients and mix well
Stir in pecans

Pour batter into small loaf pans and bake at 350 for 50 minutes
