Black Eyed Pea Jambalaya For A Cold Winter Day

I have had this recipe for quite some time. I will be making it New Years Day, it’s great when it’s cold outside. I have always loved black eyed peas, I remember my grandma making them for New Year’s. This recipe was given to me by a coworker so I decidedto try it, and was glad I did. Serve with corn muffins.

1 pound of light pork sausage
2 pounds of lean ground beef
1 large onion chopped
Salt to taste
Pepper to taste
1 large can Rotel tomatoes
1 bag of Dry Black eyed Peas
Bacon

1.Cook Black eyed Peas according to package directions in a large pot. I prefer to use bacon to season them or you can use pork, your choice.

2.Brown pork sausage, ground beef and onion in large skillet. Add salt and pepper. Mix in Rotel tomatoes.Let simmer for 30 minutes. Serve with cornbread muffins.
