Do you like black eyed peas? I always have. My grandma
would make a big pot of them on New Years day.
This recipe I received from a coworker.It
doesn’t take long to make and will make a big pot to
feed a hungry family. You can use canned black eyed
peas or cook your own, which I prefer. Hope you enjoy
1 pound of light pork sausage
2 pounds of lean ground beef
1 large onion chopped
Salt to taste
Pepper to taste
1 large can Rotel tomatoes
1 bag of Dry Black eyed Peas
1.Cook Black eyed Peas according to package directions in a large pot. I
prefer to use bacon to season them or you can use pork, your choice.
2.Brown pork sausage, ground beef and onion in large skillet. Add salt
and pepper. Mix in Rotel tomatoes.Let simmer for 30 minutes. Serve
with cornbread muffins.
