Pineapple Pecan Cake Review

This is my review of the Pineapple Pecan Cake from Collin Street Bakery.

 I was born and raised in Texas, so I am very familiar with Collin Street Bakery in Corsicana Texas.  The bakery has five locations, two in Corsciana, one in Waco, Greenville and Lindale.  The Waco bakery is just a few miles from my house. You can choose from a variety of sandwiches, pastries, cakes, pies,  or enjoy gourmet coffee at the Cinchona Coffee Bar. Collin Street bakery was founded in 1896 and is famous for their fruitcakes that are shipped worldwide and are still to this day handmade. I have traveled many times threw Corsicana and stopped by the bakery.  I have always had a very pleasant experience. I love their cookies.  This will be the first time, though I have tried  any of the fruitcakes because I have never been a fan of fruitcakes of any kind. This just does not appeal to me at all.

 So when I received the Pineapple Pecan Cake to review, I wasn’t sure if I would like it or not. The cake comes in a lovely little tin. The first thing I noticed is this cake is  full of native Texas pecans, and I absolutely love pecans , It’s a Texas thing! The pineapple in this cake is grown in Costa Rica on a plantation that is owned by the bakery.  I love Pineapple and pecans, so I was hoping this cake was as great as the reviews on the website.

 I cut a small slice and decided to give it a taste right away after receiving it, and I was so glad I did. I loved this cake. A small piece went a long way. It is not overwhelmingly sweet, and I liked that. I look forward to tasting other cakes like the  White House Pumpkin cake and  a fruitcake during the holiday season.
