Banana Nut Nutella Mini Muffins

This morning I  was in the baking mood so I decided to make some Banana Nut Nutella Mini Muffins. I love Nutella, and I love incorporating it into my recipes.  I have never used Nutella in my banana bread recipe before. So I decided to experiment and use my mini muffin Wilton pan for this recipe.   My banana bread always comes out moist and delicious.  I had a little Nutella left from a previous recipe so I decided to put some in my banana bread batter. I also added a teaspoon of cinnamon.  I sprinkled a few pecans on the top and popped them in the oven.  These mini muffins are great for a quick snack or breakfast on the run. I hope you will try this recipe. The Nutella is what makes these mini muffins exceptional.

 

Banana Nut Nutella Mini Muffins

1 1/2 cup all-purpose flour
1 tsp baking soda
1 pinch salt
1 tsp cinnamon
 3 tbsp melted butter
1 cup sugar
1 egg 
1 tsp vanilla  bean paste
or vanilla extract
4 bananas mashed
1/4 cup Nutella
Chopped Pecans About 1/4 cup
 

Mix dry ingredients until incorporated, set aside. Add sugar, melted butter, egg and vanilla to standing mixer.  Beat until mixture is mixed well. Add mashed bananas and mix until incorporated. Add dry ingredients and mix just until you can no longer see the flour. With a mini scoop add batter to mini muffin pan and sprinkle a few chopped pecans on the top. Bake for 10 to 15 minutes at 350 degrees or until a toothpick inserted, comes out clean.  I love to serve these fabulous muffins warm with just a pat of butter. Enjoy!
