I spent most of the morning trying to decide what recipe I wanted to try. I knew I would have a busy day because I had to go shopping for a baby shower that I am attending next week and I was also going to visit a friend. I wanted to try something easy, yet unique. I came across the the perfect recipe. I love cookies so I found the Luxury Blueberry, Pine Nut, and Chocolate Cookies recipe on page 176 and knew I had to give them a try.This recipe has dried blueberries, pine nuts, chocolate chips and rolled oats. I bought extra dark chocolate chips and used real butter. Dried blueberries and pine nuts can be a bit pricey but I had enough left over to make another batch so I think it was worth it.
Now on to the recipe..
Let butter come to room temperature and
blend the sugars with the butter until the mixture is
light and fluffy. Next add the egg and beat
again until incorporated.
Sift in the dry ingredients and fold through. Stir in the oats.
blueberries, pine nuts and chocolate chips being sure to
distribute them throughout. I used extra dark chocolate chips
for this recipe.
Using a soup spoon scoop up rounds of dough about the
size of a golf ball. Roll dough into balls and gently press
down making a flattened shape on a cookie sheet. Bake for 15 minutes at 350.
Cool cookies before eating, if you can resist.
I was very impressed with the taste of these delicious cookies
and the Saved By Cake Cookbook. I look forward to trying
other delicious recipes and would recommend this great
cookbook to my readers.
Luxury Blueberry, Pine Nut Chocolate Cookies
1 stick butter
1/2 cup light brown sugar
1/3 cup dark brown sugar
1 cup all-purpose flour
1/3 cup cocoa powder
pinch of salt
1/2 tsp baking powder
1/2 cup rolled oats
3 1/2 ounces dried blueberries
3/4 cup pine nuts
1/2 cup dark chocolate chips
(70% cocoa solids)
