Irene’s Meatloaf Potato Suprise

I went to visit my step mom and dad. My step mom the night before had made a meatloaf. I tried it and was hooked. It’s different than the usual meatloaf
made with tomato sauce and ketchup. Made with bread crumbs, beef broth, and hash browns, this recipe is definitely a keeper. You will need:

1 cup soft Breadcrumbs
1/2 cup Beef Broth
1 Egg, beaten
1/4 tsp Italian Seasoning
4 Tsp. dried minced Onions
1 Tsp. Salt
1/4 Tsp. Pepper
1 1/2 lbs. ground Beef
4 cups frozen Hash browns, thawed
1/4 fresh Parsley, minced
1 Tsp. Onion salt

For Sauce:
1 can (80z) Tomato Sauce
1/4 cup Beef Broth
2 Tsp. prepared Mustard

In a bowl, combine breadcrumbs, 1/4 beef broth, eggs and seasonin. Let stand for a couple of minutes. Add the Beef and mix well. On a piece of waxed paper, pat meat mixture into a 10 inch square. Combining Hash browns, Parsley and Onion salt, spoon over meat. Roll up in Jelly-roll style, removing waxed paper as you roll. Pinch ends and edges to seal. Lace with seam side down in an ungreased shallow baking pan. Bake at 375 degrees for 40 minutes. Combine the 3 sauce ingredients. Spoon over meatloaf and return to oven for 10 more minutes. Sprinkle with Parmesan cheese, if desired.
